White Wood Ear Mushroom and Lily Bulb Herbal Soup

Ingredients
1 cup dried white wood ear mushroom
1/2 cup dried lily bulb
1/2 cup lotus seeds
10-12 red dates (jujube), pitted
2 tablespoons goji berries
8 cups water
Honey (optional, to taste)
Prepare
Soak the white wood ear mushroom in room temperature water until it becomes soft. Rinse and cut it into smaller pieces.
Rinse the dried lily bulb, lotus seeds, and goji berries under cold water.
Cut pitted red dates in half.
Boil and Simmer
In a large pot, add 8 cups of water and bring it to a boil.
Add the white wood ear mushroom, lily bulb, lotus seeds, red dates, and goji berries to the boiling water.
Reduce the heat to low and let the soup simmer for about 30-40 minutes, or until the ingredients are tender.
Sweeten (optional) and serve
If desired, add honey to sweeten the soup.
Once the soup is ready, remove it from heat and let it cool slightly. Ladle the warm soup into a bowl and enjoy!
